Preparation

Start preparing the pumpkin and onion rösti by peeling the onion, then peel the pumpkin, remove the seeds and grate it into strips.

Thinly slice the onion and add it to the grated pumpkin pulp in a bowl.Add the egg and mix, also add the grated parmesan, the starch, the coarsely chopped rosemary needles, salt, pepper and mix everything well delicately.

With the mixture obtained, create small pancakes and brown them in a non-stick pan greased with a drizzle of oil.

When both sides are golden, remove the rösti from the heat and serve them immediately.

Curiosities and advice

Rösti are a traditional Swiss culinary dish, the term means "roast".In the traditional version, the main ingredient is potatoes;we have declined them in an autumn version with pumpkin and onion.In this recipe the aroma is given by rosemary, but nothing stops you from trying with sage or thyme.

Steps
