Also ideal as a single dish, gnocchi with broccoli cream allow you to satisfy the palate of the whole family with lots of vegetables and the delicious crunchiness of dried fruit.
Ingredients
- 350 g of fresh broccoli
- 600 g of fresh potato gnocchi
- 100 g of dried fruit and almond flakes
- 1 clove of garlic
- olive oil extra virgin
- salt and pepper
Preparation
Start preparing the gnocchi with cream of broccoli and dried fruit by cleaning the broccoli, then wash them and separate the florets, cutting the larger ones in half.Also use the central stem eliminating the external part (a bit like artichokes).
Bring plenty of lightly salted water to the boil, then throw in the broccoli with the peeled garlic clove (removed of the internal core) and let them cook for about ten minutes.When will they be soft drain them using a slotted spoon, keeping the cooking water to cook the gnocchi.Keep a few small whole florets aside and put all the other broccoli in the blender glass, or in a bowl, with a drizzle of olive oil and 1-2 tablespoons of the vegetable cooking water.
Toast the almond flakes in a non-stick pan.Blend everything until you obtain a cream and keep it aside.
Dip the gnocchi in the boiling broccoli cooking water. As soon as they come back to the surface drain them with a slotted spoon, place them in a bowl and season them immediately with the broccoli cream, a drizzle of raw oil and freshly ground pepper.Serve the gnocchi with broccoli cream immediately sprinkled with the reserved broccoli florets, dried fruit and toasted almond flakes.
Curiosities and advice
If you like to get your hands dirty, you can also prepare the gnocchi yourself potatoes.For 4 people, mix 1 kg of boiled potatoes with 300 g of flour, 1 egg, a pinch of salt and nutmeg.Work the dough until you obtain a soft homogeneous dough, then cut it into 4 pieces, work each piece into a sausage with a diameter of approximately one finger, then cut it into pieces approximately 1-2 cm large.Work them with your hands into the shape you prefer and sprinkle them with flour to prevent them from sticking.They are ready to be cooked and seasoned to your liking.Steps
- Clean the broccoli, separate the florets, cut the largest ones in half and boil everything in boiling water with the peeled garlic
- Drain the soft broccoli with a slotted spoon but keep the cooking water
- Keep a few small florets aside and blend all the other broccoli with olive oil and 1-2 tablespoons of cooking water, if necessary
- Toast the almond flakes in a hot non-stick pan
- Cook the gnocchi in the boiling vegetable cooking water
- Drain the gnocchi as soon as they come to the surface and season them with the broccoli cream
- Sprinkle the gnocchi with the broccoli cream with a drizzle of olive oil, pepper, the reserved broccoli florets, the dried fruit, the toasted almond flakes and serve immediately
