Ingredients  

  • 300 g of fresh, clean Norwegian salmon, without skin or bones
  • 300 g of fresh organic tofu
  • 1 egg
  • 1 table spoon grated (or chopped) fresh ginger
  • fresh dill
  • 2 spoons of soy sauce
  • 2 spoons of wheat starch or potato starch
  • 3 spoons of sesame seeds
  • 2 spoons of olive oil extra virgin
  • salt

The preparation begins Norwegian salmon meatballs and tofu by coarsely chopping the salmon, then crumble the tofu with the tines of a fork.

Put everything in a bowl, add the lightly beaten egg, the chopped ginger, the coarsely chopped dill, the soy sauce, the starch (or starch) and mix everything until you obtain a homogeneous compound (add a pinch of salt only if necessary).

Lightly grease your hands with a little oil then work the mixture to form more or less spherical meatballs.Gently pass the meatballs obtained in the sesame seeds and cook them for a few minutes in a non-stick pan without adding any type of fat.

When the surface is slightly golden and crunchy, remove the salmon and tofu meatballs from the heat and serve them immediately, still warm, flavored with a few sprigs of fresh dill.

Curiosities and advice

Norwegian salmon and tofu meatballs are ideal for making children enjoy the fish with gusto.They are in fact a second course rich in noble proteins and low in saturated fats.You can then try taking them in your lunchbox to work, perhaps accompanied by pan-fried pak choi (so-called Chinese cabbage).

Steps 

  • Chop the salmon and tofu and place them in a bowl
  • Add the lightly beaten egg, chopped ginger and dill, soy sauce, starch and mix everything well until you obtain a homogeneous mixture.
  • With the mixture obtained, using your hands, create spherical meatballs
  • Roll the meatballs in the sesame seeds
  • Cook the meatballs in a non-stick pan without adding any type of fat
  • When the surface of the meatballs is golden and crunchy, remove them from the heat and serve.
