The vegetables and cheese make clafoutis with red onions, courgette flowers and goat cheese a tasty vegetarian appetizer or a perfect dish for a trip out of town.
Ingredients
- 2 red onions from Tropea
- 200 ml fresh cream
- 250 ml organic milk
- 100 g spelled flour
- 50 g grated parmesan
- 100 g fresh goat cheese
- 3 organic eggs
- 4-6 courgette flowers
- fresh thyme
- 1 walnuts butter
- olive oil extra virgin
- salt and pepper
Preparation
Start preparing the clafoutis with red onions and courgette flowers by peeling and thinly slicing the onions.Clean the courgette flowers eliminating the stalk and the internal pistil, then wash them gently under a fine jet of cold water.
Break the eggs into a bowl and beat them, then add the cream, the milk and mix well using a whisk.Also add a spoonful of oil and the flour, sifting it a little at a time and continuing to mix with the whisk until you obtain a homogeneous compound.
Pour the grated parmesan, add some thyme leaves, season with salt and pepper and mix again.Preheat the oven at 180°C.
In the meantime, butter the inside of single-portion molds, dust them with a veil of flour and pour a little batter into each up to about 2/3 of the mold.Sprinkle the surface with courgette flower petals, a few onion rings, a few more thyme leaves and a slice of goat cheese.Bake the clafoutis and leave to cook for approximately 30 minutes.When the surface is golden, take the clafoutis with red onions, courgette flowers and goat cheese out of the oven, let them cool and serve.

- When the surface of the clafoutis is golden, take them out of the oven, let them cool and serve.
